Tamarind Juice

Growing up, this used to be a family favourite. Highly refreshing during hot summer days, this juice is best served icy cold. If you like tamarind, you will LOVE this sweet but tangy juice.

Instructions
Ingredients
100gm tamarind (seeds with pulp)
2 cups hot water
1/2 to 1 cup sugar (depending on how tangy the tamarind is)
1/2 tsp. salt
4 additional cups of cold water

Wash and rinse off the tamarind pulp. Put it in a bowl and then add the 2 cups of hot water to it. Cover the bowl and allow it to stand for 2-3 hours. Mix and press out the pulp from the seeds, then sieve the mixture to seperate the juice from the rest of the seeds/pulp and strings. Next, add half a cup of sugar and the salt. Give this a mix until the sugar is dissolved. I find this easier to do in a blender, it mixes the sugar faster. Then add the additional water to dilute the juice to a thin consistency. Keep checking the taste and add more sugar or water if needed.
