Chicken Gyro

For lack of a better name for this yummy bread, I've decided to call it Caterpillar bread (coz it sort of looks like a caterpillar, although I assure you no caterpillars were harmed in the making of it! :D) It's a soft bun with a filling, pretty to look at and delicious in taste. Big hit with the little ones!
InstructionsIngredients for Chicken
500 gm boneless chicken thighs, cut into chunks
2 tbsp. yoghurt
juice of half a lemon
2 tbsp. vegetable oil
1 tsp. garlic paste
1/2 tsp cumin powder
1 tsp. paprika powder
1 tsp. dried oregano
1/4 tsp. rosemary or thyme
1 tsp. salt
1/2 tsp. black pepper powder
pinch of cinnamon
1 tsp. chilli powder (optional)
Other Ingredients
tzatziki sauce
4 pita bread
1 sliced onion
2 sliced tomatoes
chopped lettuce crispy fries (optional)
Mix all the chicken ingredients together, cover and refrigerate to marinate for at least 2 hours or up to overnight. When ready to cook, remove from the fridge about 30 minutes earlier to reduce some of the chill from the fridge. Thread the chicken chunks on skewers and grill over a hot BBQ grill until slightly charred and cooked through. Alternatively you can grill them in a pan drizzled with oil on the stove top for about 4 mintues per side or until cooked through. Remove from the skewers and rest them for a couple of minutes. Then using a sharp knife, slice up the chicken into bite sized pieces. To assemble, lay out a warm pita bread. Add some lettuce, onions, tomatoes, chopped chicken and a dollop of tzatziki sauce. Fold it in half to hold everything together and wrap it up with greaseproof paper or some foil. Serve with fries and some extra tzatziki on the side.
